Peewee Kiri Rolls

Cheese, as we know is loved and relished by many. So, how could we miss out on an easy-peasy recipe which contains cheeeeeeeese 🙂

For the Ramadan Special segment, glittercut.com brings to you the easiest recipe of mini processed crafted cheese rolls, adding to your balanced diet with the essential supply of vitamins and minerals. Most of all, this dish is a sure shot hit among the kids.

Ingredients: serves 3

Kiri Cheese Cubes 3 cubes cut into half

ready – to – use Samosa pattis / Switz Samosa Leaves 3 pattis / leaves

Wheat flour 1 Tbsp dissolved in 1/4th cup of water (this will act as a glue to stick the corners of the pattis / leaves.)

Garnishing:

Sugar 1 cup

Water 150 ml

Cardamom 2 pcs

Method:

Take one patti / leaf at a time and cut it into equal half from the short edge.

In each half, place one half of the Kiri Cheese cube and fold the patti neatly. Make sure to glue the edges of the patti well using the wheat flour mix.

Once all the rolls are ready, in a deep pan, heat oil. In the oil add the rolls one by one and fry until delicious golden brown.

For Garnishing:

In a pan, add water and sugar along with cardamom. While on heat, mix well until the sugar dissolves completely and forms a rich sweet liquid.

Empty the syrup in a deep bowl.

Serving:

Dip the rolls in the sugar syrup bowl and serve on a plate.

Treat your taste buds with the most astonishing taste with such an easy-peasy recipe.

Tips:

You can seal the edges of the patti, dipping your finger in the paste and spreading it on edges.

The servings are 2 rolls for each person, you can add and serve as you like.

Chickpea chaat loaded with protein and fibre is decadent and dripping delicacy which can make anyone go weak in the knees.

So, here it is:

Ingredients:

Chickpeas (soaked overnight) 250 gm

Yogurt 250 gm

Cumin powder / zeera powder 1 tsp

Salt to taste

Sugar 2 – 3 Tbsp

Apple 1/2 cup (chopped)

Pomegranate 1/2 cup arils

Mint leaves 1/4 cup (chopped)

Garnishing:

Coriander leaves

Method:

Wash and soak chickpeas in water overnight. Boil the chickpeas with some salt in a pressure cooker till tender. It should take around 15 -20 minutes to pressure cook. (NOTE: The cooking time may vary.). Once done, drain the chickpeas and set aside.

In a bowl, take yogurt add sugar, salt, cumin powder and mint leaves – mix it all well.

Just before serving, add the mixed yogurt to the chickpeas along with the chopped fruits.

Garnish with coriander leaves and top it off with tamarind chutney.

Tips:

Do not add fruits to the yogurt well before time, as it might become soggy and might end up looking dreary.

You might want to add black pepper powder, red chili powder and coriander powder to the dish to make it more spicy and give it a more desi taste.

Yogurt intake combined with fruits, is a bonus. It becomes the source of high quality protein and has a synergistic effect on health as it combines various vitamins and minerals.

Yogurt 2 cups

Milk 1 cup

Mango 1 (peeled and cut)

Honey 1 Tbsp

Sugar 3 Tbsp

Vanilla essence 1 Tsp

Cardamom powder 1/2 Tsp

Ice cubes 4 – 5

For garnishing

Dry fruits chopped

Cardamom powder

Method:

In a blender, add mango, milk, yogurt, vanilla essence, sugar, honey, cardamom powder and ice cubes and blend till the ingredients turn into a thick smooth liquid.

Your lassi is ready.

Serve it in a glass and garnish it with dry fruits and sprinkle a pinch of cardamom powder at the top.

Exhilarating Watermelon Juice

Today, for our Ramadan Special segment on glittercut.com, brings to you yet another easy-peasy recipe.

Watermelon juice, is a drink which is cooling, light and delicious.

As we know watermelon possesses unique coolant qualities, hence, it does wonders in keeping the body temperatures cool during the summers and fasting during Ramadan. It also hydrates and add to the water intake of your body.

So, here we go…

Ingredients (Serves 1)

Watermelon cut into cubes 1 glass

Ice cubes 4 cubes

Lemon juice 2 Tbsp

Sugar 2 Tbsp

Vanilla Extract 1 Tsp

Rose water (optional) 1 Tsp

Salt 1/4 tsp (a pinch)

Equipment

Blender (my blender was out of order, hence I had used the handheld electric whisk, it turned equally well.)

Method

Add all the ingredients to the blender, and GRRRRRRRRRRRRRRRRRRRRRRRR… (blend it, till all blends really well) 😀

You are good to go.

Serve in a glass, for garnishing add mint leaves.

Tips:

For sugar, make sure you add according to the sweetness of the watermelon. I did not take out time to deseed my watermelon, and trust it was completely fine and worked out just okay.

For desserts, vanilla extract is my favorite ingredient, I love its aroma, and it also enhances the flavors of the other ingredients while chemically adding more flavor of itself.

Obviously, if going into the nitty-gritty details, the list goes long, but, the list above is keeping in mind the basic stuff required and remember… we are here only for easy-peasy hassle free recipes… YAAYY!!

Cold, cold, cold, cold Coffeeee!!

As we all know, we are in the month of Ramadan being observed by the Muslims all over the world.

Apart from the spiritual essence and soul awakening purpose, Ramadan is also famous for its festivity and feasts offered in during the month.

So, this month I have come up with a dedicated segment for the easiest recipes for snacks, iftars, get-togethers or late night snacking.

Fondness for cooking is what I have not assimilated yet, however, I can cook well when I am asked to cook. (It runs in my genes) 😛

Today, in the Ramadan special segment, I would start with my favorite drink. Cold Coffee.

It is easy-peasy and a no-fail recipe for sure.

Cold coffee (servings 1)

(for more servings, do the additions and the math to get the sufficient drink)

Ingredients

Coffee powder (1 Tbsp)

Sugar (1 Tbsp)

Vanilla extract (1/2 tsp)

Ice cubes (3 cubes) (adding this to the blender, makes the drink frothier)

Milk (1/2 glass)

Date honey (1 1/2 Tbsp) / Regular honey can also be used

Chocolate ice cream (4 small scoops)

Garnishing ingredients

(any of these can do)

Whipped Cream (optional) Recipe for homemade whipped cream is mentioned at the end of the post.

Grated Chocolate (optional)

Chocolate Sauce (optional)

Equipments

Blender

Glass / jar / mug (for the beverage to be served in)

Method

In the blender, add coffee powder, sugar, vanilla extract, ice cubes, milk, Date honey, 3 scoops chocolate ice cream and blend till all the ingredients mix well and form a liquid drink.

For serving.

First, take the empty glass in which the drink will be served. Drizzle the chocolate sauce on its sides. Once the side of the glass has been decorated, pour the drink to the glass. Add the remaining scoop of chocolate ice cream and top it up with whipped cream. Trickle a little more chocolate sauce or you can grate the chocolate bar at the top to finish the exotic look of your very tempting cold coffee.

Ingredients

Heavy plain cream (250 ml) (cold)

Sugar (3-4 Tbsp)

Vanilla extract (1 tsp)

Equipments

whisk / handheld electric whisk

Method

Add cold plain cream to a deep bowl along with sugar and whisk it with your available equipment.

Please whisk till it reaches the stiffness as per your desire.

It is time consuming, so make sure you prepare your whip cream way earlier than the drink.

Whip cream then can be stored in an air -tight container for up to 3-4 days.
